Today we are going to prepare a simple recipe for individual salmon and arugula pizzetas I like to do from time to time. The same recipe serves to make with other smoked fish or for example with Iberian ham or other ingredients that should be taken raw and not cooked in the oven.
I like these pizzas a lot because, unlike the traditional ones, they are taken warm, since smoked salmon and arugula are mounted on pizza after being baked. The result is a very thin and crunchy pizza base, ideal for the appetizer or to drink if you want a light and original dinner.
Ingredients for 2 people
- 4 empanadilla wafers, 1/2 mozzarella cheese ball, 4 teaspoons fried tomato, 2 slices of smoked salmon, arugula leaves, 2 pickled pickles, chives and olive oil
How to make individual cold salmon and arugula pizzetas
Over one Baking tray covered with a baking paper or a silicone silpat, we distribute the wafers of empanadilla separated and we put in each of them a teaspoon of fried tomato, extending it with the back of the same spoon.
On the tomato, we distribute pieces of mozzarella cheese that we cut by pinching, without completely covering the wafers. Bake at 220º in preheated oven, using the heat program up and down. When about 7 minutes pass, the cheese will be bubbling and the edges of the wafers will have browned and begin to bend.
Turn off the oven and remove the pizzas from the oven allowing them to cool slightly. About each of the freshly baked pizzasWe carefully distribute half a slice of smoked salmon cut into narrow strips, three arugula leaves and four slices of gherkin.
We row with a little freshly ground black pepper, a dash of extra virgin olive oil and some chopped chives. Once the pizzas are assembled, we serve them immediately.
