A good brownie has to be juicy and with intense chocolate flavor. It doesn't matter if we put nuts or some other stumble in the dough, or if we add cream cheese, coconut or a cocoa topping; The important thing is that you have an intense and moist heart, nothing of caked masses, so the easiest thing is to prepare it without flour. And so we also achieve that it is gluten free.
Because for me that is one of the commandments of the perfect brownie, that its interior is very juicy, somewhat sticky, moist but without being raw. So these cupcakes are perfect for coeliacs, since precisely gluten-rich flours only hinder that texture. In addition we will use oil to avoid dairy products, and it is the ground hazelnut which will give us the right and necessary consistency for the dough.

Preheat the oven to 170ºC and prepare a rectangular or square mold, greasing it well or covering it with sulfurized paper. Melt the dark chocolate to the water bath or in the microwave, only if we control it very well, so that it does not burn. Cool slightly.
Arrange the eggs in a medium bowl with the sugar, adding more if we are very sweet, or less if we tolerate less cloying sweets. Whisk with rod blender until a homogeneous mixture is left, add the vanilla and oil, and whisk gently a little more.
Add the melted chocolate, mixing with a spatula or tongue, and finally add the ground hazelnut, salt and sifted cocoa powder. Mix gently until you have a lump-free dough, homogeneous. Pour into the mold, tapping to remove possible air bubbles.
Sprinkle a pinch of coarse salt flakes (optional) and bake for about 20 minutes. Check that you are at your point by clicking with a stick in the center; should get slightly stained, but not wet. Let cool slightly before unmolding and let cool completely on a rack.
With what to accompany the juicy brownie without flour
This juicy brownie without gluten and lactose It can be taken as is or sprinkled with icing sugar, cocoa powder or even with a melted chocolate topping. Although I personally like to accompany it with some fresh ingredient, such as fruit, ice cream, jam or plain yogurt, I admit that I tried it still warm and it was just as good.
