Ingredients: 1 small coconut, 1 bay leaf, 1 clove of garlic, 1 clove, 1 pinch of turmeric, salt, 300 grams of organic brown rice, 3 ears of corn, 2 papayas, 1 onion, 2 tablespoons of honey, 1 lemon, Chili pepper powder and virgin olive oil.
preparation: Mix 1 liter and ½ of water with coconut water and bring it to a boil; We add the bay leaf, garlic clove, clove, turmeric and salt. When they boil, we add the washed organic brown rice and let it cook for 30 to 40 minutes (as directed by the producer) and once cooked, drain it and cool it with water.
We put a saucepan with water to boil, instead of salt (this hardens the corn) with a pinch of sugar and a little butter and add the cobs, letting them boil for about ten minutes. Next, we extract the meat from the coconut and cut it into cubes, the same we do with the papayas to which we will have removed the skin. We mix these fruits with rice, cooked corn and well cut onion.
Dress the salad with the sauce obtained by mixing the honey, lemon juice, chilli and salt and add the olive oil as all the ingredients are beaten, so that the sauce is bound.
