We will start by placing the hake loins - once peppered to our liking - in a glass or Pyrex source, checking that it is suitable for use in the microwave. Keep in mind that you must endure a cooking of about 4 or 5 minutes at maximum power.

Next add a little extra virgin olive oil, distributing it over the slices of hake. On the table, we cut the tomato into half-centimeter slices and place them on the fish slices, covering the surface. To give extra flavor, sprinkle the source with a pinch of Provencal herbs of your liking. I used a mixture of thyme, dill and oregano, but you can use the ones you have or the ones you like best.

To finish, we add four or five tablespoons of water and put the source in the microwave oven, so that it is cooked at maximum power for 4 minutes. The exact time will depend on the microwave model you have and the thickness of the hake slices. For more safety you can cook the slices of hake 2 minutes on one side and then turn them over and make them another 2 minutes on the other side, although you will surely look good if you do them 4 minutes on one side.

On them, the tomato will have cooked perfectly and it will look as if you had roasted it in the oven, but be careful that it burns a lot. The fish slices will be well juicy and well cooked. Further, at the bottom of the glass fountain both the fish juices and the water that the tomato will have released will remain, naturally forming a very light sauce that will make this dish very juicy.
